LIGHT ITALIAN COOKIES

Pizzelles Cookies are traditional Italian waffle cookie which are covered in powdered sugar. They were originally made in the Abruzzo region of south-central Italy. You’ll need a Pizzelle iron for this one. Years ago my Mother used a long metal rod that you could attach different patterns to. Now you can purchase electric irons to make these delicious cookies but most of the fun was dipping the irons into the batter and deep frying them.

The basic recipe has undergone quite a few changes throughout the years. Traditionally anise is used but you can use vanilla or almond extract for a different flavor. You can also replace the margarine with butter or vegetable oil.

Normally Pizzelles Cookies are made around the holidays but you could enjoy this recipe any time of the year.

INGREDIENTS

Cuisinart Pizzelle Iron

  • 6 eggs
  • 1 and 1/2 cups of sugar
  • 2 sticks of margarine, melted
  • 2 Tbls of anise extract
  • 3 and 1/2 cups of all purpose flour
  • 4 tsp of baking powder
  • 1 cup of powdered sugar for dusting

    PREPARATION

  • With an electric mixer beat together the eggs and sugar until fluffy.
  • Add the melted margarine and the anise extract.
  • Over a large bowl sift together the flour and baking powder.
  • Gradually stir in the flour mixture into the egg and sugar mixture.
  • Pre-heat your pizzelle iron.
  • Drop the batter with a spoon into the iron and cook for around 90 seconds.
  • Cool them down on a wire rack.
  • Repeat the process until all the batter is used up.
  • Dust with the powdered sugar.
