Orange Salad

We usually eat an orange salad with our pasta and broccoli dinner.

  • 2 medium sized cal naval oranges peeled and sliced across the grain of the orange not too thick and layer on a flat platter
  • Peel and slice two kiwi's and layer on top of oranges
  • Hard boil two eggs and put through and egg slicer twice
  • Then turn egg to kind of mince and then layer on top of orange and kiwi's. On top of that I usually spread Parmigiana Reggiano shredded on of that.
  • Then lightly salt and grate some fresh black pepper
  • Then to finish spread some Felipe Barrio virgin oil over the top and eat as a salad with broccoli and tortellini mmmm good!!

    A bottle of Chianti vino then mangia and fa una festa

    oranges and hard boiled salad

    I'm italian american my grandmother used to make orange salad with hard boiled eggs. I never knew how to make it. I was very young. I hope this will be the same. I loved it as a child.

    We grow Naval Oranges & Kiwi's here in the San Diego area. This recipe sounds so unusual & tasty that I just have to try it! I'll let you know. Thanks for sharing it.

    I've made this salad for some "non-believers" who initially thought it was a pretty weird idea..... converts I've made!!! Everyone LOVES it!!! Because it is sooooo delicious! Mmmmm!
