Extra Virgin Olive Oil
4 to 5 Fresh Plum Tomatoes
Grated Parmesan Cheese
Take 1 large Eggplant slice it in thin round slices & season with salt.
Coat broiler size pan or larger with Oil and lay Eggplant in single layer.
Sprinkle top of Eggplant with oil. Chopped Tomatoes and layer across Eggplant.
Sprinkle Black Pepper & Garlic Powder on top of layer.
Then take the Shredded Mozzarella and top the Eggplant and Tomatoes. Then sprinkle Grated Cheese.
Cover with foil and let bake @ 350 degrees for 40 minutes.
