Baked Eggplant

Eggplant Lovers!!!


INREDIENTS

  • 1- Eggplant
  • Extra Virgin Olive Oil
  • 4 to 5 Fresh Plum Tomatoes
  • Grated Parmesan Cheese
  • Shredded Mozzarella
  • Garlic Powder
  • Salt
  • Black Pepper

    PREPARATION

  • Take 1 large Eggplant slice it in thin round slices & season with salt.
  • Coat broiler size pan or larger with Oil and lay Eggplant in single layer.
  • Sprinkle top of Eggplant with oil. Chopped Tomatoes and layer across Eggplant.
  • Sprinkle Black Pepper & Garlic Powder on top of layer.
  • Then take the Shredded Mozzarella and top the Eggplant and Tomatoes. Then sprinkle Grated Cheese.
  • Cover with foil and let bake @ 350 degrees for 40 minutes.

    This eggplant recipe is the best I ever tried!!!!
    My Brother would never eat eggplant any which way and now @ 47 he does!
