Chicken Tetrazzini

by Susan
(Durant, Ok)

I just cooked chic tetra after tasting it many years ago and I used nutmeg, thyme, parsley, garlic powder, salt, pepper, a dash of cayenne. The taste was so different from most of my cooking but I kept tasting it and finally decided it was great. My kitchen kind of smelled of Thanksgiving. I made mine with egg noodles but I think the spaghetti works better. I also covered the top with a mixture of panko bread crumbs, Parmesan and just a smidgen of shredded cheddar cheese. I actually loved the mushrooms and noodles in this recipe the most. Instead of the whipping cream I used sour cream and I also added pimiento and paprika. This was a culmination of several recipes but I was determined not to use cream of mushroom or chicken soup.
