Grilled Italian Style Eggplant

Our garden over produced and my daughter April and I worked this out on our grill. We serve it as a side dish to fish/steak and chicken. As a meal we top it with the seafood or meat and serve with a fresh salad. As a side dish we serve it with out meat toppings. Thanks April, Love Mom


  • 2 large dark purple eggplant
  • Good olive oil
  • Kosher salt
  • Pepper
  • Chili powder
  • Favorite Italian pasta sauce
  • Mozzarella cheese
  • Fresh Basil
  • Fresh crab meat or thinly slice cured ham or pounded grilled chicken breast (optional)


  • Slice the eggplant 1/2 in thick
  • Brush with olive oil
  • Sprinkle with kosher salt, peper, generous amount of chili powder!
  • Grill on hot gill for 3 to 5 mi per side.
  • Remove from heat but leaving on the grill,
  • Put a slice of mozzarella cheese on each slice
  • Add 2 teaspoon of pasta sauce and top with fresh crab meat ham or chicken (optional) and close lid to grill let sit for 5 min. on grill with NO HEAT under the eggplant.
  • Remove to serving dish and sprinkle with fresh basil. ENJOY!
