My Italian Stuffed Vegetables In Home Roasted Spicy Marinara Sauce

INGREDIENTS

  • 10 Roma tomatoes, quartered.
  • 1 Sweet onion, chopped into 1” chunks.
  • 4 Large cloves of garlic, peeled.
  • 1 Serrano chili, seeded.
  • 1/2 C Fresh basil or oregano (or 1/4 C each).
  • 2 Tbs Balsamic vinegar.
  • 2 Tsp Sugar.
  • 3 Tbs Olive oil.
  • Salt & pepper to taste.

    PREPARATION

  • Preheat oven to 450 degrees.
  • In a large bowl, mix all ingredients.
  • Arrange vegetable mixture in an even layer on a jelly roll pan.
  • Roast vegetables for 30 minutes, remove from oven.
  • Allow mixture to cool for a couple of minutes.
  • Place vegetables in a food processor or blender and puree mixture until smooth, taste, and add salt/pepper if needed.
