Italian Quiche!

For many years, I have trying to create a main dish that has a high criteria, but is quick and easy to prepare I especially wanted it in an all-in-one dish! Lastly, I wanted it to be a main dish that I could simply serve to my family, and 'Also Treat Special Guests!'

So, I experimented and experimented, and finally came up with an Italian main dish which no one ever refused! I called it "Italian Quiche."

This quiche uses ingredients that can be found at 'any grocery store and also, are readily available. The main dish is quick and easy to make! Have fun preparing and serving this "Savory Italian Recipe!"

INGREDIENTS

  • 1 frozen pie crust ((Keep frozen until needed)
  • 1 lb. Ground Pork Sausage - Best Brand available.
    (I generally use Jimmy Dean or Bob Evans)
  • 1/4 cup, or one small onion, chopped
  • 1 pound bag Fresh Baby Spinach Leaves
  • 1 large egg
  • 9 oz. bottle sliced mushrooms, well-drained
  • 8 oz. Mozzarella Cheese, grated

    Toppings:

  • 4 oz. Cheddar Cheese, grated
    Paprika

    PREPARATION

  • Preheat oven to 400o F.
  • In a large, flat skillet, brown sausage until no longer pink.
  • Push aside and saute onions: stir well.
  • Add baby spinach, slightly beaten egg, mushrooms and mozzarella cheese.
  • Mix until well blended.
  • Remove pie crust from freezer: spoon mixture into pie shell, mounding at the top.
  • Place on the middle rack of a pre-heated oven.
  • Bake for 25 minutes.
  • Remove Quiche and sprinkle with cheddar cheese and Paprika.
  • Cover with foil and return to oven for 20 minutes or until golden.
  • Place quiche on a cooling rack approximately 5 minutes.
  • Cut into 6 wedges.Serve!

    Optional: This quiche goes exceptionally well with a tossed salad, and a cool beverage, perhaps, ice-tea. (Not recommended - any carbonated beverages, coffee or milk)
