Mama's Sausage and Pepper Sandwich

by Denise Montgomery
(Alabama)

Ever since I was little this has been my mother's favorite meal. She use to eat this at the Italian Fairs that they had in New York City when she was growing up. Now we make this meal all the time-we all love it.

INGREDIENTS

  • 2 lbs Italian sausages
  • 1 yellow onion
  • 1 green pepper
  • 2 large baking potatoes
    1 loaf Italian bread
  • vegetable oil

    PREPARATION

  • Heat vegetable oil on medium.
  • Add sliced potatoes and cook until browned.
  • Add sliced onions and peppers and whole sausages.
  • Cook until sausages are done, drain and serve on split Italian bread.
  • Cut into sandwiches.

My family either eats it just as it is or tops with ketchup or tomato sauce.
