Roasted Garlic Chicken Sausage Garden Pasta

Although only 32, I am a long time cook and I have been cooking with my grandmother, mother and aunt since I was very little. I come from a family of award winning home cooks and I love the company.

My passion for cooking often takes a back seat to my busy life with two little kids and a full time job. I often try to develop simple and quick recipes that are still flavorful and healthy for my family.

My Roasted Garlic Chicken Sausage Garden Pasta recipe is a favorite to all my fans and is especially desired at the many back yard barbecues we attend.

INGREDIENTS

  • 1 12oz package of roasted garlic chicken sausages
  • 1 pound mini penne pasta
  • 4 medium tomatoes cut into small cubes
  • 1 cup fresh basil, chopped and cut into small strips
  • 3 cloves garlic, finely minced
  • 7 oz. Shredded Parmesan Cheese
  • 7 oz. triangle of Brie, peeled and cubed
  • 1/2 cup olive oil
  • 1 tsp. pepper

    PREPARATION

  • Grill roasted garlic chicken sausages.
  • Cook pasta.
  • While sausage and pasta are cooking, chop tomatoes, basil, garlic and brie as directed above.
  • Peel and cube Brie cheese.
  • Mix Parmesan, brie, basil, tomatoes, garlic, olive oil and pepper in a large bowl.
  • Drain pasta, and add it to the other ingredients in the large bowl.
  • Slice sausage into bite size circles and add to the bowl.
  • Mix well - serve and eat warm immediately or cold as leftovers.
