Italian Chicken with
Peppers, Onions and Potatoes

Tender Juicy Chicken

I know Sausage, Peppers, Onions and Potatoes are the best but for a nice alternative replace the the sausage with bone-in chicken. The natural juices of the chicken blend in with the sweet taste of the peppers and red onions. Adding the potatoes just makes the dish a hearty meal for the whole family.

The chicken is first sauteed and removed from the pan. Then the potatoes, onions and peppers are added and cooked until brown and tender. The chicken goes back in the pan and then the pan is deglazed with a nice red wine.. By adding chopped tomatoes and dried herbs you will creates a delicious sauce that can only be appreciated with a large crisp Italian bread.

The only wine I ever drink with this dish is a Dolcetto d'Alba. Dolcetto d'Alba is produced in Italys Northern Piedmont region. Its medium bodied, fruity, slightly spicy flavor pairs perfectly with this rustic Italian dish.
