There is nothing better than a fresh Broccoli Salad with little cherry tomatoes. Chop up a nice red onion and you have a masterpiece ready to serve. This salad is great for lunch or just before dinner.
Broccoli is full of vitamin C and is best served steamed. Hot or cold this vegetable is excellent in many Italian dishes. This broccoli recipe will put a smile on your family’s face.
1 bunch of broccoli
10-14 cherry tomatoes
1 small red onion chopped
2 cloves of garlic chopped
4 anchovy fillets finely chopped (optional)
1/2 cup of extra virgin olive oil
1/2 Tbls of Dijon mustard
1/4 cup of red wine vinegar
1/4 tsp of salt
1/4 tsp of freshly ground black pepper
1/4 cup of freshly chopped parsley
Wash and cut the broccoli into pieces.
Steam the broccoli until tender. Refrigerate to cool.
Add tomatoes and onions.
In a small bowl whisk in the remaining ingredients.
Pour over the broccoli, onions and tomatoes and your ready to serve.
Serves 4 people. Is that easy or what?
