SWEET ONIONS

Nothing better than this sweet Caramelized Onion Pizza. I don’t get this to often because every time I make pizza I have to top it with everything the rest of the family likes and I never get an onion pizza all by myself. So from now on I’m going to make one pizza just for me. Me, me, me.

If I had only one pizza to eat, this would be it. Though I hope I never have only one choice. Most onion pizzas use regular yellow onions. I like combining yellow, red and long green onions together with a few shallots and a touch of garlic. You know I’m lying,when did you ever know me to use a touch of garlic.

When making this pizza use nice fresh onions. They tend to be milder and sweeter. You can also add any other topping you can think of except it won’t be a Caramelized Onion Pizza now will it? I will admit I add a little fresh basil and parmesan cheese on top to give a little extra flavor. So now it’s a Caramelized Onion Pizza with Shallots, Basil and Parmesan Cheese.

INGREDIENTS

  • Basic Pizza Dough
  • 1 yellow onions, cut into rings
  • 1 red Spanish onion, cut into rings
  • 1 bunch of long green onions
  • 2 shallots , sliced
  • 3 cloves of garlic, finely chopped
  • 2 Tbls of butter
  • 1 Tbls of extra virgin olive oil
  • 8 fresh basil leaves
  • 1/2 tsp of salt
  • 1/2 tsp of fresh ground black pepper
  • 1/4 cup of freshly grated parmesan cheese

    PREPARATION

  • Roll out the dough in a square or round shape.
  • Sauté the onions, garlic and shallots in the butter and oil until golden brown, around 20 minutes, Be careful not to burn.
  • Drain on a paper towel and set aside to cool.
  • Top the pizza dough with the onion mixture.
  • Break up the basil and add it to the pizza.
  • Sprinkle parmesan cheese all over the top.
  • Let it sit for around 2 hours to let the dough rise a little more.
  • Pre-heat the oven to 425 degrees.
  • Bake for 30 minutes until the crust is nice and browned.
