Chicken Florentine

Spinachy

Chicken Florentine is simply tender cuts of chicken topped with fresh spinach and melted mozzarella then braised in a your favorite red gravy.

It is best to make this recipe when you have some extra spaghetti gravy sitting around the freezer. It’s an easy dish to prepare and shouldn’t take more than 40 minutes to make.

When making this chicken florentine recipe make sure you use fresh spinach and mozzarella. If you use anything else the dish just won’t turn out the same. Enjoy!

INGREDIENTS

  • 1 8 oz package of baby spinach
  • 1/2 cup of flour
  • 1/2 tsp of salt
  • 1/2 tsp of fresh ground black pepper
  • 4 boneless chicken breasts
  • 4 Tbls of butter
  • 3 Tbls of extra virgin olive oil
  • 4 to 6 slices of fresh mozzarellaCheese
  • 4 cups of your favorite Italian gravy

    PREPARATION

  • Wash the spinach under cold water and place in a frying pan with 1 Tblsof butter and cook until the spinach is wilted.
  • Season the flour with salt and pepper.
  • Dredge the chicken breasts in the flour coating evenly.
  • In a large frying pan sauté the chicken in the remaining butter and oil until browned on both sides. Around 3 minutes on each side.
  • Place some spinach and a slice of mozzarella cheese on each piece ofchicken.
  • Pour the gravy around the chicken and cook covered for around 30minutes.
