Chicken Scampi
ButteryChicken Scampi the same delicious recipe as Shrimp Scampi only substituting chicken for shrimp. It’s a tasty chicken recipe only cheaper. This easy to make chicken recipe uses butter and olive oil combined with seasoning to give an excellent flavor that I’m sure you’ll remember. Chicken Scampi can be served over angel hair pasta, which is the way I prefer it, or all by itself with a fresh loaf of Italian bread. You need the Italian bread to sop up all the sauce. I usually eat a loaf myself and leave everybody to fend for themselves. Greedy old man aren’t I? INGREDIENTS 4 boneless chicken breasts, cut into pieces1 stick of butter3 Tbls of extra virgin olive oil2 cloves of garlic, minced1 bunch of long green onions, chopped1 tsp of dried basil1 tsp of dried oregano1/2 tsp of salt1/2 tsp of fresh grated black pepper 1/4 cup of lemon juice1/2 cup of white wine1/4 cup of heavy whipping cream1/4 cup of fresh parsley, chopped1 pound of angel hair pasta (optional)PREPARATION In a large pan sauté the chicken pieces in the butter and olive oil until browned.Remove from pan and set aside.Sauté the garlic and onions around 2 minutes.Return the chicken to the pan.Season the chicken with the basil, oregano, salt and pepper.Cook for 5 to 10 minutesDeglaze the pan with the lemon juice and white wine.Reduce the mixture in halfAdd the whipping cream and heat through.Garnish with parsley and serve with pasta.Serves 4 people.
