PIZZA, PIZZA, PIZZAPortabello Pizza INGREDIENTS Basic Pizza Dough3 Tbls of extra-virgin olive oil2 cloves of garlic, chopped1 bunch of long green onions, chopped1 15oz can tomato sauce1/2 pound of fresh spinach, cooked1/2 cup of shredded mozzarella cheese1 Roma tomato, sliced1/2 cup of pepperoni, chopped 8 baby Portabello mushrooms, sliced1/2 cup of fresh basil, chopped1/4 cup of fresh grated parmesan cheese
PREPARATION In a small frying pan sauté the garlic and onions for 2 minutes.Rub a little oil on a cookie sheet, pizza pan .Gently shape the dough into a round or square shape.Let the dough rise for about an hour.Pre-heat the oven to 400 degrees.Spread the tomato sauce on top of the dough.Top with spinach, mozzarella cheese, sliced tomatoes, pepperoni, Portabello mushrooms and basil.Sprinkle the top with parmesan cheese.Cook the pizza for 30 minutes until cheese has melted and the crust is a golden brown.
Asparagus and Prosciutto PizzaINGREDIENTS Basic Pizza Dough1/2 cup of shredded mozzarella cheese1 pound of asparagus5 slices of prosciutto, chopped3 shallots, chopped2 cloves of garlic, chopped6 white button mushrooms, sliced3 tbls of extra-virgin olive oil1 Tbls of butter1/4 tsp of salt1/4 tsp of fresh ground black pepperPREPARATION Trim and peel the asparagus.Steam the asparagus for 2 minutes until slightly tender. Place the asparagus in an ice bath to stop the cooking procsessIn a medium size pan sauté the prosciutto, shallots, mushrooms and garlic for 2 minutes in 1 tbls of olive oil and butter.Season with salt and pepper.Rub a little oil on a cookie sheet, pizza pan .Gently shape the dough into a round or square shape.Let the dough rise for about an hour.Pre-heat the oven to 400 degrees.Brush the dough with the remaining oil.Top the pizza with mozzarella cheese.Arrange the asparagus on top of the pizzaSprinkle with the prosciutto, shallots, mushrooms and garlic on top.Cook the pizza for 30 minutes until cheese has melted and the crust is a golden brown.
Shrimp and Fontina PizzaINGREDIENTS Basic Pizza Dough10 medium sized shrimp1 medium yellow onion, chopped2 cloves of garlic, chopped3 Tbls of olive oilTbls of butter1/2 cup of shredded Provolone cheese1/2 cup of shredded mozzarella cheese2 tomatoes, sliced1/4 cup of fresh basil1/2 tsp of salt1/2 tsp of freshly grated ground pepper1 cup of Fontina cheese, grated
PREPARATION In a medium size pan sauté the onions, garlic and shrimp in 1 Tbls of oil and butter until shrimp is cooked.Rub a little oil on a cookie sheet, pizza pan .Gently shape the dough into a round or square shape.Let the dough rise for about an hour.Pre-heat the oven to 400 degrees.Brush the dough with the remaining oil.Top the pizza with the onions and garlic.Add the Provolone and mozzarella cheese.Layer the tomatoes and basil on top.Add the shrimp.Sprinkle with the Fontina cheese.Season with salt and pepper.Cook the pizza for 30 minutes until cheese has melted and the crust is a golden brown.
Mediterranean PizzaINGREDIENTS Basic Pizza Dough2 Tbls of olive oil1 cup of pesto sauce1 bunch of long green onions, chopped1 cup of artichoke hearts, drained1/2 cup of sun-dried tomatoes1 cup of spinach, cooked1/2 cup of black olives, sliced1/2 cup of Feta cheese, broken into pieces1/2 cup of shredded mozzarella1/4 cup of fresh grated parmesan cheese1 tsp of dried oregano1 tsp of dried thyme1/2 tsp of salt1/2 tsp of fresh ground pepper
PREPARATION Rub a little oil on a cookie sheet, pizza pan .Gently shape the dough into a round or square shape.Let the dough rise for about an hour.Pre-heat the oven to 400 degrees.Brush the dough with olive oil.Spread the pesto sauce all over the place.Top the pizza with artichoke hearts, sun-dried tomatoes, spinach and black olives.Crumble the feta cheese all over the top.Spread the mozzarella cheese on top.Season with salt, pepper, oregano and thyme.Cook the pizza for 30 minutes until cheese has melted and the crust is a golden brown.
Chocolate Cookie PizzaINGREDIENTS 1/2 cup butter, softened1/2 cup packed brown sugar1/4 cup white sugar1 teaspoon vanilla extract1 egg1 1/4 cups all-purpose flour1/2 teaspoon baking soda6 ounces semisweet chocolate chips2 tablespoons butter3 tablespoons milk1 cup confectioners' sugar1/2 cup pecan halves1/2 cup candy-coated milk chocolate pieces1/4 cup flaked coconut2 ounces white chocolate, melted
PREPARATION 1 Preheat oven to 350 degrees Combine butter, brown sugar, white sugar, vanilla, and egg until well combined.Stir in the flour and the baking soda . Pat dough onto an ungreased 12 inch pizza pan or on a cookie sheet.Bake for 15 minutes or until golden brown. Remove cookie from oven and let it cool.In a saucepan heat the chocolate chips, remaining butter or margarine, and milk over very low heat.Stir until chocolate is melted. Remove the chocolate mixture from the heat and stir in the confectioners' sugar.Beat until smooth, glossy, and of spreading consistency. If frosting is not glossy, stir in a few drops of hot water. Spread over the top of the baked and cooled cookie.Immediately sprinkle with pecan halves, M&M candies, and coconut.
Press lightly into frosting. Drizzle top with the melted white chocolate.Let stand until set. Remove from pan if desired. Cut into wedges.
