Ground Meat Tomatoes and Spinach

This simple Ground Meat Tomatoes and Spinach recipe is perfect over your favorite pasta. It’s a blend of ground beef, pork and chicken mixed with fresh baby spinach and diced tomatoes.

You can season this dish with a little garlic, fresh basil, dried thyme and oregano to create a perfectly tasting Italian meal. This mixture of meat and herbs tastes delicious over a heavier type of pasta like penne or rotini.

When making this Ground Meat Tomato and Spinach dish, you can use any combination of meat you desire, try lamb, beef and veal for a completely different taste.

INGREDIENTS

  • 1 pound of penne pasta
  • 1 pound of baby spinach, stems removed and washed
  • 2 Tbls of extra virgin olive oil
  • 1 Tbls of butter
  • 1 yellow onion, chopped
  • 2 cloves of garlic, chopped
  • 1/2 pound of ground beef
  • 1/2 pound of ground pork
  • 1/2 pound of ground chicken
  • 1 15oz can of diced tomatoes
  • 6 fresh basil leaves
  • 1 tsp of dried oregano
  • 1 tsp of dried thyme
  • 1/2 tsp of salt
  • 1 tsp of fresh ground black pepper
  • 1/2 cup of fresh grated parmesan cheese

    PREPARATION

  • In 6 quarts of boiling salted water, cook the pasta until al dente. Around 10 minutes.
  • Wash the spinach thoroughly and place in a large frying pan over medium heat.
  • Cover the pan and cook the spinach until wilted.
  • Remove the spinach from the pan, drain and set aside.
  • Heat the butter and oil in the pan and sauté the onions and garlic for 2 minutes.
  • Add the meat and break up into little pieces, cover and cook for 5 minutes.
  • Add the tomatoes, spinach, basil, oregano, thyme, salt and pepper and cook for 10 to 15 minutes more.
  • Plate the pasta and spoon the meat mixture over the top.
  • Serve with parmesan cheese

    Serves 4 to 6 people
