Italian Chicken Breasts
with Balsamic Vinegar

Chicken with a Smile

Italian Chicken Breasts with Balsamic Vinegar is one of the quickest dishes you can make. The balsamic adds a distinct flavor to the chicken.

Last week we ended up at a friends house for dinner and she made this fantastic dish. I made sure I grabbed this recipe so I could try it at home and share it with you.

She served the chicken next to a side of creamy broccoli risotto which complimented the chicken very well.

Hopefully this recipe will bring much enjoyment to you and your family.

INGREDIENTS

  • 2 Tbls of extra virgin olive oil
  • 1 red onion sliced
  • 4 cloves of garlic chopped
  • 4 boneless skinless chicken breasts
  • 1 28 oz. can of diced tomatoes
  • 1 Tbls of dried basil
  • 1 Tbls of dried oregano
  • 1/2 tsp salt
  • 1/2 tsp of fresh ground black pepper
  • 1/4 cup of balsamic vinegar
  • 1/4 cup of fresh flat leaf Italian parsley

    PREPARATION

  • Saute onion and garlic in oil for about 5 minutes in a large skillet. Remove and set aside.
  • Fry chicken breasts until browned on both sides.
  • Add garlic and onions back into pan.
  • Add tomatoes
  • Sprinkle with basil, oregano, salt and pepper
  • Pour balsamic over chicken.
  • Cover and cook for about 20 minutes.

    Plate chicken and top with tomato and onion mixture.Sprinkle with fresh parsley.

    Serves 4 people
