Italian Chicken Breasts with Balsamic Vinegar
CHICKEN WITH A SMILEItalian chicken breasts with balsamic vinegar is one of the quickest dishes you can make. The balsamic adds a distinct flavor to the chicken. Last week we ended up at a friends house for dinner and she made this fantastic dish. I made sure I grabbed this recipe so I could try it at home and share it with you. She served the chicken next to a side of creamy broccoli risotto which complimented the chicken very well. Hopefully this recipe will bring much enjoyment to you and your family.
INGREDIENTS 4 boneless skinless chicken breasts1 red onion sliced4 cloves of garlic chopped1 28 oz. can of diced tomatoes1/4 cup of balsamic vinegar1 Tbls of dried basil2 Tbls of extra virgin olive oil1/4 tsp salt1/2 tsp of fresh ground black pepper
PREPARATION Saute onion and garlic in oil for about 5 minutes in a large skillet. Remove and set aside. Fry chicken breasts until browned on both sides.Add garlic and onions back into pan.Add tomatoesSprinkle with basil, salt and pepperPour balsamic over chicken.Cover and cook for about 30 minutes.Plate chicken and top with tomato and onion mixture.
