CELEBRATION

Happy Birthday America! Here's a great 4th of July Menu for you to enjoy. The 4th of July is a great national holiday and to help you celebrate this day I've included these delicious recipes to make your weekend complete.


Don't forget the Italian sausage to accompany some of these other great dishes.

Have a safe holiday and most of all enjoy the food


Italian Pasta Salad


INGREDIENTS

  • 1 pound box of rotini
  • 4 stalks of celery, sliced
  • 2 carrots, julienne sliced
  • 1/4 cup of sweet red bell pepper, diced
  • 1/4 cup of sweet green bell pepper, diced
  • 4 long green onions, sliced
  • 1 pound of cherry tomatoes, sliced in half
  • 1 small can of black olives, pitted
  • 1 cucumber, halved and sliced
  • 1 cup of provolone cheese, cubed
  • 8 slices of Italian hard salami, julienne sliced
  • 1 and a half cups of Italian salad dressing
  • 1/2 cup of mayonnaise
  • 1/2 tsp of salt
  • 1/2 tsp of freshly ground black pepper
  • 1/4 cup of freshly grated parmesan cheese

    PREPERATIONS

  • In 6 quarts of water cook the pasta until al dente, about 10 minutes.
  • Wait until pasta is cool and add the celery, carrots, red and green peppers, onions, cherry tomatoes, black olives, provolone cheese and salami.
  • Gently toss the pasta salad and refrigerate at least 3 hours
  • In a small bowl whisk the salad dressing and the mayonnaise together and pour over pasta and toss.
  • Season with salt and pepper and top with parmesan cheese
  • Keep refrigerated until you ready to use

    Serves 6 to 8 people


    Sautéed Asparagus with Shaved Parmesan Cheese


    INGREDIENTS

  • 1 bunch of fresh asparagus, peeled
  • 2 Tbls of butter
  • 1 Tbls of extra virgin olive oil
  • 1/2 cup of shaved parmesan cheese
  • 1/2 tsp of salt
  • 1/2 tsp of fresh ground black pepper

    PREPARATIONS

  • In a large frying pan sauté the asparagus in the oil and butter until tender.
  • Season with salt and pepper.
  • Transfer to a serving plate and pour the butter and oil over the top.
  • Shave the Parmesan cheese right over the top

    Serves 8 people


    Grilled Jumbo Shrimp Wrapped with Pancetta


    INGREDIENTS

  • 12 jumbo shrimp, peeled an deviened
  • 1 cup of Italian salad dressing
  • 12 slices of pancetta or bacon
  • 1 can of French fried onions

    PREPARATIONS

  • Marinate the shrimp in the salad dressing overnight in the refrigerator.
  • Wrap each shrimp in a piece of bacon and secure on a metal skewer.
  • Grill or broil for about 10 minutes turning once until bacon is crisp and shrimp is cooked through.
  • Serve on a bed of French fried onions.

    Serves 4 people


    Italian Style Cornish Game Hens


    INGREDIENTS

  • 4 rock Cornish hens, halved
  • 2 cloves of garlic, chopped
  • 1 yellow onion, chopped
  • 1 Tbls of ground sage
  • 1 Tbls of oregano, dried
  • 1 cup of dry white wine
  • 1/2 cup of olive oil
  • 1 tsp of salt
  • 1 tsp of fresh ground black pepper

    PREPARATIONS

  • Place the hens breast side down in a large baking dish or in a large plastic bag.
  • In a bowl whisk together the garlic, onion, sage and oregano in the oil and wine.
  • Pour the wine mixture over the hens and refrigerate at least 4 hours or overnight turning every couple of hours.
  • Prepare grill.
  • Place the hens on the grill breast side up in indirect heat, cover and cook for around 40 to 50 minutes.

    Garnish with parsley. Serves 8 people


    Grilled Italian Roast Beef


    INGREDIENTS

  • 4 pounds of boneless sirloin tip roast
  • 1/4 cup of olive oil
  • 3 cloves of garlic, sliced thin
  • 1 tsp of oregano
  • 1 tsp of dried basil
  • 1/2 tsp of salt
  • 1/2 tsp of fresh ground black pepper

    PREPARATIONS

  • Cut small pockets in the roast and insert the garlic into the pockets
  • Rub the beef with olive oil
  • Sprinkle with oregano, basil, salt and pepper
  • Refrigerate for 4 hours or overnight.
  • Prepare the grill.
  • Place the beef on indirect heat and cook turning once for 1 hour and 30 minutes to 2 hours.

    Serves around 8 people
