4th of July Menu

CELEBRATIONHappy Birthday America! Here's a great 4th of July Menu for you to enjoy. The 4th of July is a great national holiday and to help you celebrate this day I've included these delicious recipes to make your weekend complete.
Don't forget the Italian sausage to accompany some of these other great dishes. Have a safe holiday and most of all enjoy the food
Italian Pasta Salad INGREDIENTS 1 pound box of rotini4 stalks of celery, sliced2 carrots, julienne sliced1/4 cup of sweet red bell pepper, diced1/4 cup of sweet green bell pepper, diced4 long green onions, sliced1 pound of cherry tomatoes, sliced in half1 small can of black olives, pitted1 cucumber, halved and sliced1 cup of provolone cheese, cubed8 slices of Italian hard salami, julienne sliced1 and a half cups of Italian salad dressing1/2 cup of mayonnaise1/2 tsp of salt1/2 tsp of freshly ground black pepper1/4 cup of freshly grated parmesan cheesePREPERATIONS In 6 quarts of water cook the pasta until al dente, about 10 minutes.Wait until pasta is cool and add the celery, carrots, red and green peppers, onions, cherry tomatoes, black olives, provolone cheese and salami.Gently toss the pasta salad and refrigerate at least 3 hoursIn a small bowl whisk the salad dressing and the mayonnaise together and pour over pasta and toss.Season with salt and pepper and top with parmesan cheeseKeep refrigerated until you ready to useServes 6 to 8 people
Sautéed Asparagus with Shaved Parmesan Cheese
INGREDIENTS 1 bunch of fresh asparagus, peeled2 Tbls of butter1 Tbls of extra virgin olive oil1/2 cup of shaved parmesan cheese1/2 tsp of salt1/2 tsp of fresh ground black pepperPREPARATIONS In a large frying pan sauté the asparagus in the oil and butter until tender.Season with salt and pepper.Transfer to a serving plate and pour the butter and oil over the top.Shave the Parmesan cheese right over the topServes 8 people
Grilled Jumbo Shrimp Wrapped with Pancetta INGREDIENTS 12 jumbo shrimp, peeled an deviened1 cup of Italian salad dressing12 slices of pancetta or bacon1 can of French fried onionsPREPARATIONS Marinate the shrimp in the salad dressing overnight in the refrigerator.Wrap each shrimp in a piece of bacon and secure on a metal skewer.Grill or broil for about 10 minutes turning once until bacon is crisp and shrimp is cooked through.Serve on a bed of French fried onions.Serves 4 people
Italian Style Cornish Game Hens
INGREDIENTS 4 rock Cornish hens, halved2 cloves of garlic, chopped1 yellow onion, chopped1 Tbls of ground sage1 Tbls of oregano, dried1 cup of dry white wine1/2 cup of olive oil1 tsp of salt 1 tsp of fresh ground black pepperPREPARATIONS Place the hens breast side down in a large baking dish or in a large plastic bag.In a bowl whisk together the garlic, onion, sage and oregano in the oil and wine.Pour the wine mixture over the hens and refrigerate at least 4 hours or overnight turning every couple of hours.Prepare grill.Place the hens on the grill breast side up in indirect heat, cover and cook for around 40 to 50 minutes.Garnish with parsley. Serves 8 people
Grilled Italian Roast Beef INGREDIENTS 4 pounds of boneless sirloin tip roast1/4 cup of olive oil3 cloves of garlic, sliced thin1 tsp of oregano1 tsp of dried basil1/2 tsp of salt1/2 tsp of fresh ground black pepperPREPARATIONS Cut small pockets in the roast and insert the garlic into the pocketsRub the beef with olive oil Sprinkle with oregano, basil, salt and pepperRefrigerate for 4 hours or overnight.Prepare the grill.Place the beef on indirect heat and cook turning once for 1 hour and 30 minutes to 2 hours.Serves around 8 people
