Italian Style Meatloaf Sandwich

There’s nothing like a perfect Italian Style Meatloaf Sandwich to end a great day. I crave this delicious meatloaf sandwich all the time. It’s definitely comfort food at its best.

Of course meatloaf is one of the few meals that always tastes better the next day. Once the flavors get a chance to blend in the fridge your always in for a special treat. Sometimes I’ll make a it just for a Meatloaf Sandwich.

This Italian Style Meatloaf Sandwich is extra special because I usually cover it with marinara sauce. It’s a little extra that adds a tremendous amount of flavor to the sandwich. Served hot or cold, this sandwich makes a great meal.

INGREDIENTS

  • 1 pound of ground chuck
  • 1 pound of ground pork
  • 2 Tbls of olive oil
  • 1 small onion, chopped
  • 2 carrot, chopped
  • 2 celery, chopped
  • 1 green pepper, chopped
  • 2 cloves garlic, chopped
  • 1/2 cup of fresh grated Romano cheese
  • 1 cup of bread crumbs
  • 1/4 cup of fresh basil, chopped
  • 1/2 tsp of oregano
  • 1/4 cup of fresh Italian flat leaf parsley
  • 1 tsp of salt
  • 1 tsp of fresh ground black pepper
  • 1 and 1/2 cup ketchup
  • 1 Tbls of Worcestershire
  • 2 eggs
  • Ciabatta Rolls
  • Marinara sauce

    PREPARATION

  • In a large frying pan, sauté the onions, carrots, celery, green pepper and garlic in the olive oil until tender. About 2 to 3 minutes.
  • Set the mixture aside to cool.
  • In a large bowl mix together by hand the ground beef, ground pork, vegetable mixture, Romano cheese, breadcrumbs, basil, oregano, parsley, salt, pepper, 1 cup of ketchup, Worcestershire and eggs.
  • Pre-heat the oven to 350 degrees.
  • Place some olive oil in the bottom of a roasting pan.
  • Shape the meat mixture into a loaf and top with the remaining ketchup.
  • Baked cover for 1 and 1/2 to 2 hour.
  • Slice and serve on Ciabatta rolls topped with marinara.

    Serves 6 to 5 people
