Mediterranean Salad

A Mediterranean Salad is one of the most delicious and nutritious dishes you can make. You can make this salad with just about anything including the addition of tuna, chicken or shrimp.

In this dish, cheese, olives and fresh vegetables come together to make a refreshing side or a full blown meal. It’s protein and vitamin rich and is very easy to prepare.

Traditionally a Mediterranean Salad is made up of finely chopped cucumbers, tomatoes, onions, etc., but in this recipe I like using larger pieces. Also, the addition of artichoke hearts and walnuts gives this dish a great flavor.

INGREDIENTS

  • 2 cups of baby arugula
  • 1 cup of cherry tomatoes, sliced in half
  • 1 cucumber, sliced
  • 1 small red onion, diced
  • 1 clove of garlic, finely chopped
  • 1/4 pound of Italian salami, diced
  • 1 small can of artichoke hearts, packed in water
  • 1/2 cup of black mission olives, pitted
  • 1/2 cup of Sicilian olives, pitted
  • 1/2 cup of walnuts, shelled and chopped
  • 1/4 cup of fresh mint leaves, chopped
  • 1/4 cup of extra virgin olive oil
  • 3 Tbls of red wine vinegar
  • 1 tsp of dried oregano
  • 1/4 cup of fresh grated Parmesan cheese
  • 1 tsp of salt
  • 1 tsp of fresh ground black pepper
  • 1/2 cup of Parmesan cheese, shaved

    PREPARATION

  • Mix together the arugula, tomatoes, cucumbers, onions and garlic in a large glass bowl.
  • Add the salami, olives, walnuts and mint.
  • Refrigerate for about an hour.
  • In a medium size bowl whisk together the oil, vinegar, oregano and parmesan cheese.
  • Pour the mixture over the salad just before serving.
  • Season with salt and pepper and top with shaved parmesan.

    NOTE: Tuna, chicken or shrimp is optional.

    Serves 4 people
