Since pizza dough is the canvas then pizza sauce is the paint. Here's a great opportunity to express your creativity. Sauces can be made in a variety of different ways just as paints come in many different colors.

This is the second most important ingredient in pizza making. If you can't make a great crust or a great sauce, then you can't make a great pizza.

Pizza Sauce can be thin and smooth, thick and chunky, lightly seasoned or a garlic olive oil or pesto sauce can be used.

Traditional Neapolitan sauce is simply San Marzano plum tomatoes, basil and salt. Other sauces call for using tomato paste, garlic, oregano, etc.. Depending on your taste, you can experiment and come up with your own perfect sauce.

You may eventually want to explore into the area of gourmet pizzas. Here you'll break from traditional Italian sauces and get into a whole new world of pizza making.

Whatever your desire, here are a few of my favorite pizza sauce recipes.

MY SAUCE

INGREDIENTS

  • 1 15oz can of tomato puree
  • 1 6oz can of tomato paste
  • 2 shallots minced
  • 2 cloves of garlic minced
  • 2 Tbls of olive oil
  • 1/4 cup red wine
  • 1 tsp of dried basil
  • 1 tsp of oregano
  • 1 tsp of sugar
  • 1 tsp salt
  • 1/2 tsp freshly ground black pepper

    PREPARATION

  • Saute shallots and garlic in oil for about 5 minutes.
  • Add tomato puree, paste, wine and cook about ten minutes,
  • Add basil, oregano, sugar, salt and pepper.
  • Cook for around 1 hour stirring on occasion.
  • Let cool before topping the pizza dough.


    FRESH TOMATO SAUCE

    INGREDIENTS

  • 10 plum tomatoes
  • 1 6oz. can of tomato paste
  • 1 small yellow onion minced
  • 2 cloves of garlic minced
  • 6 leave of fresh basil chopped
  • 1 tsp dried oregano
  • 1 Tbls sugar
  • 1 tsp salt
  • 1/2 tsp freshly ground black pepper

    PREPARATION

  • Place tomatoes in a large pot of boiling water for about 3 minutes.
  • Remove tomatoes and let cool.
  • Peel the skin off the tomatoes and clean out the seeds and chop.
  • In a large skillet saute the onions and garlic for 2 minutes.
  • Add tomatoes, paste, basil, oregano, sugar, salt and pepper and cook for about 2 hours stirring occasionally.
  • Let cool before placing on top of pizza dough.


    UNCOOKED PIZZA SAUCE

    INGREDIENTS

  • 1 28oz can chopped tomatoes
  • 4oz. of tomato paste
  • 3 cloves of finely crushed garlic
  • 1/8 cup of freshly grated romano cheese
  • 1/8 cup of freshly grated parmesan cheese
  • 1 Tsp of dried basil
  • 1 tsp of dried oregano
  • 1/4 tsp of salt
  • 1/4 tsp of freshly ground pepper
  • 1 Tbls of sugar

    PREPARATION

  • In a bowl mix together all the ingredients and let chill in the refrigerator for about 2 hours to let the seasoning blend together.
