Parmesan Encrusted Rack of Lamb



SPRINGTIME

Everything is better with Parmesan cheese. This elegant Parmesan Encrusted Rack Of Lamb is fairly simple to make and will make a marvelous presentation when served.

Lamb has always been a great springtime meal always served at Easter time. But as we all know it makes a great meal any time of the year. When I think of Lamb I think of a romantic candlelight dinner with nice soft music playing in the background.

I’m sure it’s that way in some people's homes but not in mine. When I make this dish the kids are usually screaming and arguing and there's a ton of people running in and out of my kitchen. That’s about as romantic as it gets. But in the end I know everyone will be sitting down together and sharing a great meal.

INGREDIENTS

  • 1 8 bone rack of lamb, trimmed and frenched
  • 1/2 cup of seasoned breadcrumbs
  • 1/4 cup of Parmesan cheese
  • 2 cloves of garlic finely chopped
  • 1 Tbls of dried basil
  • 1/4 cup of parsley chopped
  • 1/2 tsp of salt
  • 1/2 tsp of freshly ground black pepper

    PREPARATION

  • Pre-heat oven to 375 degrees.
  • Rub the lamb with oil, salt, pepper and rosemary.
  • Place lamb on a roasting pan.
  • Roast lamb uncovered for 30 to 35 minutes for medium rare.
  • In a small bowl mix garlic, parsley, breadcrumbs and cheese and place the mixture on a plate.
  • Carefully remove the lamb and roll it into the breadcrumb mixture coating all sides.
  • Increase the oven temperature to 424 degrees.
  • Place the lamb back into the roasting pan.
  • Continue roasting for another 5 to 10 minutes.

    Just delicious. Serves 4. If you want good food cook at home. If you want romance go out to dinner.
