Italian Roast Pork
with Rosemary Potatoes

LOVE GROWS WHERE MY ROSEMARY GOES

This Italian roast pork recipe with rosemary potatoes will make your mouth water while your waiting for it to cook. You and your guests won't be able to escape the aroma that fills the room.

Rosemary is sometimes associated with memory and believe me you won't forget this one. Anytime your guests smell this aromatic herb they will be reminded of you.


I like using dried rosemary for this recipe just because the flavor of rosemary truly comes out when I grind it up in a spice grinder. That's the first part of the adventure.

The second part is the cooking and the eating so let's start discovering Italian Roast Pork with rosemary potatoes.

INGREDIENTS

  • 2 to 3 pound pork loin
  • 1 large yellow onion
  • 1 pound of small red potatoes sliced into halves.
  • 2 or 3 cloves of finely chopped garlic
  • 2 tsp of freshly ground rosemary
  • 1 tsp of dried thyme
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1 tsp freshly ground black pepper
  • 1/4 cup of olive oil
  • 1/2 cup of dry white wine

    PREPARATION

  • Rub the pork roast with garlic, thyme, oregano and 1 teaspoon of the ground rosemary.
  • Drizzle some of the olive oil on the roast and rub to coat.
  • Place pork into a roasting pan with a rack at the bottom.
  • Place potatoes around the roast and sprinkle with the remaining rosemary.
  • Add onions and remaining olive oil
  • Add salt, pepper and white wine
  • Place in 350 degree oven covered for about 45 minutes.
  • Uncover and roast for about another 30 minutes.

    Slice and serve with a nice side of steamed broccoli or cauliflower.
