Rotelle with Ricotta

This simple Rotelle with Ricotta recipe will take around fifteen minute to prepare. Rotelle is simply blended with seasoned creamy ricotta cheese.

You can either use the basil and parsley mixture or a combination of other fresh herbs. Try adding a little fresh mint or dill to liven the dish up a bit. Whatever you use I’m sure you’ll enjoy this simple recipe. After all anything with ricotta is delicious.

You can also substitute the pasta but make sure you use something similar to the rotelle like rotini or even penne pasta will work. As long as it is a type of pasta that will hold the ricotta mixture. Enjoy!

Fresh and Light

INGREDIENTS

  • 1 pound of Ricotta cheese
  • ¼ cup of fresh basil, chopped
  • ¼ cup of fresh Italian flat leaf parsley, chopped
  • 1 egg
  • ½ tsp of salt
  • ½ tsp of finely grated black pepper
  • ¼ cup of fresh grated parmesan cheese
  • 1/8 tsp of fresh grated nutmeg
  • 1 pound of Rotelle, Rotini or penne pasta

    PREPARATION

  • In a large bowl whisk together the ricotta, basil, parsley, egg. Salt, pepper, cheese and nutmeg.
  • In 6 quarts of boiling salted water, cook the pasta until al dente. Around 12 minutes.
  • Drain the pasta and toss into the ricotta mixture.
  • Mix thoroughly and serve hot with extra parmesan.

    Serves 4 people.
