Pasta with Sun Dried Tomato Pesto



This Pasta with Sun Dried Tomato Pesto is a refreshing pasta recipe for the summertime. Not only can you use this pesto sauce for pasta but it’s great spread on toasted Italian bread.

This twist on traditional basil pesto combines these tomatoes with toasted almonds, Parmesan cheese and a little basil to create a rich textured sauce that will blend right into the pasta.

Sun Dried Tomato can be used in a variety of different dishes. Blend them into a risotto, mix them with beans or spread them on a pizza. Any way you decide to use them you’ll truly enjoy their flavor and richness.


  • 1 pound of linguine
  • 1 8oz jar of sun-dried tomatoes packed in oil, drained and chopped
  • 4 cloves of garlic
  • 1 cup of fresh grated Parmesan cheese
  • 1/2 cup of fresh basil
  • 1/2 cup of almonds, toasted
  • 1/2 tsp of salt
  • 1/2 tsp of fresh ground black pepper


  • In 6 quarts of boiling water cook the pasta until al dente. Around ten minutes.
  • Using a food processor, blend together the tomatoes, garlic, cheese, basil, almonds, salt and pepper until finely chopped.
  • Drain the pasta reserving 1 cup of liquid.
  • Combine the tomato mixture with the pasta water.
  • Plate the pasta and mix in the tomato pesto sauce.

    Serve with extra Parmesan cheese

    Serves 4 people
