Sweet Peas with Pancetta
and Pine Nuts

SWEET, SWEET

Whether fresh, canned or frozen, sweet peas always make a great side dish. Add a little pancetta and toasted pine nuts and you have a wonderful dish to serve with a variety of different meats, poultry or sea foods.

Pancetta is an Italian form of bacon. If you can’t find pancetta then regular bacon can be substituted. You can even add a little broth and cream to the peas and mix them with some pasta to create a whole other meal.

Either way, peas are a delicious nutritious vegetable that your sure to enjoy.

INGREDIENTS

  • 1 package of frozen baby peas
  • 2 slices or pancetta or bacon chopped
  • 1 small yellow onion finely chopped
  • 1/4 cup of pine nuts
  • 2 Tbls of butter
  • 1/2 tsp of salt
  • 1/2 tsp of black pepper

    PREPARATION

  • Defrost peas according to package directions
  • In a frying pan cook the pancetta for around 5 minutes until crisp.
  • Remove the pancetta from the pan and drain on a paper towel.
  • Cook onions and pine nuts in the pancetta drippings until the onions are tender and the pine nuts are slightly toasted.
  • Remove the onions an pancetta from the pan and add butter and peas until about 5 minutes until heated through.
  • Stir in the onions, pine nuts and pancetta and you ready to serve.

    Serves 6
