Veal with Tomato, Basil and Onions

VEAL AT ITS BEST

Sometimes I’m just not in the mood to cook elaborate dinners and this Veal with Tomato, Basil and Onions is perfect for that occasion. It’s a quick and easy recipe that doesn’t take much time to prepare.

The combination of onions, basil and tomatoes are just the best three ingredients in the world and can be used in so many different great dishes. Oh, and let’s not forget the garlic. Where would anything be without garlic.

This simple recipe can just as easily be made with chicken. You can serve it by itself or for a more heartier meal over a bed of spaghetti.

INGREDIENTS

  • 8 slices of veal cutlets or three chicken breasts sliced lengthwise
  • 1/2 cup of flour for dredging
  • 1 medium sized red onion sliced
  • 3 cloves of garlic chopped
  • 2 Tbls of butter
  • 1 Tbls of extra virgin olive oil
  • 1 15oz can of diced tomatoes
  • 10 fresh basil leaves broken into pieces
  • 1/2 tsp of salt
  • 1/2 tsp of freshly grated black pepper

    PREPARATION

  • Pound the meat out thin between two sheets of was paper.
  • Season the flour with salt and pepper.
  • Dredge the meat in the flour mixture.
  • In a large frying pan sauté the meat in 1 tablespoon of butter and oil for 3 minutes on each side. Remove and set aside.
  • Add the rest of the butter and sauté the onions and garlic for 1 minute.
  • Add the tomatoes and basil and cook for 10 minutes.
  • Return the meat to the pan for 1 minute and your ready to serve.

    Plate the meat on top of some spaghetti or serve topped with the tomato and onion mixture. Serves 4.
