PERFECT PIZZA

Delicious Yellow Pepper Pizza with red onions is an excellent pizza to make at home. The combination of sautéed sweet peppers and red onions topped with diced tomatoes and fresh mozzarella is one of the best combinations I’ve tried. Not only does this make a great tasting pizza but you can also use it to top Focaccia Bread to give it an added flavor.

I love the crisp flavor of yellow bell peppers over any other pepper for this recipe. Yellow bells really stand out from the rest. They’re sweeter than green bell peppers and juicier.

Italian red onions are perfect choice to top this pizza. They have a sweet sharp flavor when cooked and strong flavor when eaten raw. They’re great for salads and many Italian dishes including my Italian Chicken Breasts with Balsamic Vinegar.

INGREDIENTS

Kitchen Supply Co. 14x16-in. Baking/Pizza Stone

  • Basic Pizza Dough
  • 3 medium size yellow bell peppers, cut into 1 inch strips
  • 1 large Italian red onion, sliced
  • 2 cloves of garlic, finely chopped
  • 1/4 cup of extra virgin olive oil
  • 1 15 oz can of diced tomatoes
  • 1 ball of fresh mozzarella, sliced
  • 1 tsp of dried basil
  • 1/2 tsp of salt
  • 1/2 tsp of fresh ground black pepper

    PREPARATION

  • In a large frying pan saute the peppers, onions and garlic until tender.
  • Rub a little oil on a cookie sheet or pizza pan.
  • Gently shape the dough into a round or square shape.
  • Top the pizza with the pepper and onion mixture.
  • Top with the tomatoes and fresh mozzarella.
  • Season with basil, salt and pepper.
  • Cover it up an let it sit for 1 hour to rise into a thicker dough.
  • Pre-heat oven to 425 degrees.
  • Bake for 30 minutes.
